We ate from Pancho's Tacos food truck in Pahoa today. Current location/hours is across the street from Boogie Woogie, Tues-Thurs 10:30am-4:30pm. They have a web site with online ordering but we ordered in person:

We wanted to try a bunch of different flavors so got the $40 family platter and mixed and matched the different meat options. It came with 10 tacos, burrito, quesadilla, sauces, chips, rice, beans, flan or ceviche etc etc. A lot of food.
Everything we had was excellent. Will definitely be going back.
Definitely a "to go" situation. There is a covered area to wait for food but no place to sit etc.

All you need is a pickup truck. Lower tailgate, you have a nice place to eat.

We have had some really good meals from there. It's great that Sal has an agreement with them so they can park there .

Ate there again yesterday. Second meal was even better than the first!
They will be going to four days a week in 2021! Check their web site for holiday hours until then.

One question maybe somebody knows, I ordered and paid online, but they didn't start making the food until I got there. I'm not whining, just wondering if that is normal.

Yeah, I think it's because they have drive-up customers that may be ahead of you.

Actually, panchos is our favorite Mexican food on the whole island!
And I’m from the rio grande valley of Texas, originally, so that’s saying something.
We have tried lots of other places and some were nearly inedible. Yeah, Lucy’s in Hilo is semiOk, but Panchos is better.
I cook Mexican style food at home, also. But getting Mexican type ingredients to cook with is a challenge. Various cheeses, dried Chile’s, Spices, etc.
Anybody know where (Hilo, some store?) locally has a good selection of Mexican stuff to cook with? I’ve been ordering from the internet but that’s expensive.

There was a Mexican grocery store a few doors down from the Hilo Burger Joint last time I ate there. It was pre-covid so not sure it's still there.
