In my experience, they do ripen. I buy green pineapples at the market and usual wait several days until they turn more yellow. I've never had one that didn't.

Yay hooligal!!! Pull the leaf and if it comes out easily...it's ready...

The pigs ate all our white pineapples this year...maybe next year.
