Our neighbor chops it & adds to a pork/garlic/ginger stirfry or cooks it in coconut milk, both yummy! However he does not use just any ol banana heart ( our dwarf apple are 'no good' for banana heart...but are a yummy banana!) I wish I could give you more info than that...but I do not have good banana heart, so have not tried anything...plus, I have no idea WHAT good banana heart vs bad involves...
Oh, I do know that you use the juice of a lemon or lime on the knife, cutting board & in a bowl of water to reduce the blackening, & you peel or cut open the flower & clean out the baby banana/blossom, discard the stalk & membrane, babies go in the bowl of citrus water

Here's a link to a banana blossom salad. It looks similar to green papaya salad, if you enjoy that.

Shave Ice...
Unlike the purple bulb banana blossom from Hawaii, Mexico and South America that is available and used in the USA, Chef Khai remembers the lovely white, tender banana blossoms he enjoyed in Vietnam. Sadly my banana are Purple --- tho maybe not sadly because the banana's are ONO! ![]() |
