Are Rhubarb Leaves Poisonous?
#1
I was just trying to add different foods to our diet, so I bought so Rhubarb at the local market. While looking for recipes, I noticed that the leaves are not edible and could make you sick, or cause your kidneys to shut down. The stock is the only part you can eat.

Has anyone had any problems eating the leaves, and how did you cook them?

If I remember correctly rhubarb leaves (the green part) contain high levels of oxalic acid, just like potato leaves. Oxalic acid in high enough concentration can damage your kidneys, and also inhibit the uptake of calcium ions. This is why spinach, which also contains some oxalic acid should be cooked before consuming, or else you don't uptake calcium and I can't remember if it affects irony too.

Yes Steve, your memory is spot on. Smile
Here's another link http://www.nlm.nih.gov/medlineplus/ency/...002876.htm that I found on it to confirm that it is toxic.
I am sure glad, I seen the link warning of the toxicity of the leaves, before we ate it.
