Is there any place in Hilo or Puna that has a fairly large assortment of cheeses?

KTA on Puainako has two cheese sections. 
The cooler near the back of the wine and liquor area is the one with imported and less common varieties.

It's not Hilo/Puna, but Costco has some *awesome* aged Gouda for cheap, and a large variety of other cheeses.
