It is my experience that one would be hard pressed to find better food at any island establishment than the fare at our parties. You Punatics can cook!! I'm not alone in wanting the recipe for the fruit pizza and did enjoy the quiche as well. Please post so everyone can taste what they might have missed. I can hardly wait for the next gathering. We are so lucky to live in a beautiful place with equally beautiful people. Mahalo and much aloha. PJ

Gosh it sounds to me like a great party, fabulous weather, fun crowd and hopefully we will make the next one. If Gene and I could have made it I would have baked up some french toast for you all. I heard the fruit pizza was a real hit and am hoping that recipe is posted also!! Aloha, Mella

BAKED FRENCH TOAST WITH APPLES

½ large loaf of French bread
4 eggs
1 ½ cups whole milk
1/3 cup sugar divided
½ TBS vanilla extract
2 Granny Smith apples/ or other tart apple
1 tsp ground cinnamon
1 TBS butter or margarine

Preheat oven to 400* F. Spray 9”X13” baker lightly with non-stick vegetable spray. Cut bread into 1 ½” slices with serrated bread knife and arrange closely in a single layer in Baker. In batter bowl, beat eggs lightly with ½ of the sugar. Beat in milk. Pour ½ of batter over bread.

Peel, core and slice apples. Arrange apple rings evenly over bread in baker; pour remaining egg-milk mixture over apples. Mix cinnamon with remainder of sugar and sprinkle evenly over apples. Dot apples with butter. *see note. Bake 35 minutes. Cool 5 to 10 minutes, then cut into squares and serve with warm maple syrup.

Yield 6 servings. Recipe can be doubled for 12 servings.

*NOTE: Baked French toast with apples can be prepared ahead to this point. Covered with plastic wrap, and refrigerated overnight, then bake for 50 minutes the next morning.

This is delicious, I don’t know if it is really French, but it sure tastes like they had a hand in it. Enjoy. I think it would be enhanced with a slice or two of Canadian bacon also.

Scott and Jayne, please correct me if I forgot anything, but here's what I remember about the famous Fruit Pizza.

Take several rolls of the pre-made pizza dough you can find with the rolls, etc in the refrigerated section of the supermarket. Mush them all together so there's no seams or anything and roll it into a nice pizza crust. Pierce it with a fork all over. Sprinkle with sugar and bake until golden brown.

Take a box of the no-bake cheesecake mix (I forget the brand name) and mix up the cheesecake part to use as the cream cheesy yuminess. Spread that on the baked dough.

Cover with whatever sliced fresh fruit you can get your hands on.

Heat some apricot jam until its runny and use that as a glaze on the fruit. Toss on some chopped almonds and you're done.

Many thanks to Jayne and Scott, Kahunascott and maukamomma, for the yummy recipes from the punaparty. The fruit pizza is a great recipe for innovention, so even more delicious renditions can come about. So good of you to share, but hey are these really Italian, I thought they'd have more pineapple in them!!
