I woke up this morning with ths huge craving for Haupia! I want to be able to make me some of that wonderful, yummy dessert. So could someone please direct me a good Haupia recipe....please?

I feel kinda foolish cause I imagine Haupia is very easy to make. But it's one of those things I never got around to because a family member was always around to make for me!

If you want a quick fix those haupia pies at mcdonalds are just really,really yummy mmmm!

Here's an easy recipe; 1 can coconut milk, 1/4 cup cornstarch, 3/4 cup milk, 6tsp. sugar. mix together in saucepan over medium heat, stir constantly until silky looking, pour in 8x8 pan, refrigerate.

NOH of Hawaii even has a haupia dessert mix, add contents of envelope with 1 cup water, stir, stir while heating on med. to boil, pour into shallow pan, refrigerate. (Noh also has powered coconut milk, for those that want just a little, not a whole can...or don't want a whole lotta cans...
The mix was ~$1, same with the powdered coconut milk.

There's also other recipes online for Da company kine' with shortbread in the pan under the haupia, with broiled coconut, crushed mac nuts, or pineapple chunks on top. All way good. Yum.

which do you prefer, the young or old coconut? Now days I don't eat much coconut. But in my days of youth, I'd go crazy for young coconuts. WE use to call it "spoon meat", that transparent young coconut meat was sooooo ono! As I have gotten older though my metabolism has slowed down, and well coconuts are real fattening in nature so I have backed off in recent years..

They came in a can similar to the Pic-Nic brand canned shoestring potatoes so many people use on that hideous "green bean & shoestring" cassarole pot luck dish that shows up at every church dinner.

What a great thrill to open that lid and smell the wonderful aroma of those crispy coconut treats.

Can they still be purchased? Does anyone have a recipe for making them?

I don't remember ever having those types of coconut chips, but it sure reminded me of Banana Chips!!! You know the ones you find in the tropical trail mix? After eating them for five minutes you begin to wonder if your fillings in your mouth will with stand the Banana abuse.
