I have a friend who is interested in opening up a new restaurant in Hawaii, hopefully the BI. If anyone knows anyone that has been through the process and would not mind answering a few questions, please let me know. Mahalo

Actually, it is more important to have good service. Good service but average food ranks higher than bad service and better than average food according to the market studies.

I always thought an authentic Indian restaurant would do really well on the BI. Tandoori and currie dishes. I can't make up my mind if North or South Indian would be better. I think it would do great in Pahoa too.

Even though I am not in that business anymore, I have been a Director of Food & Beverage for 25 years, so obviously, I know a few things about the F&B business. According to market studies done by Madison Avenue advertising firms people who visited restaurants always reflected on the service first and good service actually made the food seem better! Even with outstanding food when the service was bad the food actually was rated less than outstanding by the patrons. Another example, the exact same dish without garnish was rated less good than the one with decorative garnish. I guess it's just human behavior.

State of mind has a lot to do with whether you enjoy a meal or not. If the help aggravates you then chances are you won't enjoy your food as much as if the wait staff adds to your dining experience. Makes sense to me.
