So, in the Puna and surrounding high humidity areas, has anyone had any success in dehydrating fruit and/or veggies, and further in storing them when dry? I'd be interested in someday making a granola or something similar with island fruit to enjoy when not on the islands.

I live in Hilo Asly, where it is plenty humid, but not as bad as inland areas. I have done some dehydrating and if you cryovac immediately after drying it stays dry. The actual dehydrating process may take a little longer and it is best if you use really thin slices. You could bring cryovaced dried fruit to the mainland but not fresh fruit.

Interesting, I wondered about bringing the fruit to the mainland and requirements. What type of dehydrator are you using Devany? Thanks, Ann

I have a Bradley smoker that I use for making dried meats/jerky and an Excalibur 3900 for fruit, flowers and veggies. If you are buying one to use here, do not get a stainless steel or metal one. Plastic is far better for this climate.
