Most of the wild pigs I hunt are up on Mauna Kea. They are really lean, so no bacon! If I smoke the meat, I'll add a couple green papayas to the marinade to help tenderize the meat. Sometimes I grind the meat for sausage, or I'll grind it and mix with ground beef for meat loaf and meat balls. The pigs up there are so lean that I will usually add a little pork fat from KTA. Pigs down here do have more fat and the flavor of the meat depends on their diet. Pigs that eat mac nuts, sweet potato and other veggies probably produce better quality meat than you can buy in the store!
