i go to my kitchen! my wife is from china (been in the states a year) and she is a terrific cook! plus, i lived in china for a year, so i know what REAL chinese food is like. yes, the chinese food in america is awful, NOT real chinese food! too sweet! most chinese dishes in china are spicy! i'm surprised no one has tuned into the fact that american's are more adventuresome with food that in previous times. i can't tell you how many amazing dishes i had in china, let alone, the delicious "street food," that is everywhere. i miss the street food the most... dan bing for breakfast (a spicy/sweet egg burrito), sheng jian and zhen zhu nai cha for lunch (battered, fried pork dumplings and tapioca iced tea) and then a 5-6 course meal for dinner, for about $10 US! oh man, i miss the food in china...

Mauka,
I would love those recipes too!
My search for decent Chinese food is partly inspired by the fact that my husband is mostly vegan, although he will eat a tiny bit of seafood, and I am a total omnivore. But he likes his food super spicy and I am a wimp, so anything we cook at home will generally satisfy one or the other of us, but not both. Plus he flat out will not eat any of my favorite Thai or Chinese dishes because they have meat in them. Thus the search for restaurants where, on occasion, we can both get happily fed.
Check out Jennifer Lee's video here for a very funny and informative take on Chinese American cooking:

you know it john! i'm sure it's a bit harder for your wife to find "taiwanese" stores with food and spices, maybe it's a twist on chinese stuff? we have a decent korean market in our area, but we found a great, HUGE chinese market in orlando. my wife went crazy... looking forward to next year's trip back to china...but my wife is an amazing cook, so i'm pretty lucky. homemade dumplings and tomato/tofu soup for dinner tonite! hen hao chi!
aloha all...

I used to go to Joe Woo's chinese kitchen in North Hollywood when I went back to visit. (mainly because "Joe" (the father) started it before I was born and it was so good.)
Otherwise I consider most places here a mix. It like our ethnic groups here - a little of this and that.

Taiwanese cusine is the same as the Mandarin cusine in China. I prefer the more spicy Sichuan cusine, but my eyes sure were opened in China, I had no clue they had 12 different cusines there!

Well not much in Puna area for specifically Chinese food but Ning's in Pahoa has good Thai food at reasonable prices. I'm definitely gonna check them out again next time back this fall.
