My Grandpa and grandma would always have shaved and toasted coconut chips. I loved them - but as I think of them now they probably would not rate very high on the healthy food scale; they were crispy, greasy, salty, and Oh so delicious...

They came in a can similar to the Pic-Nic brand canned shoestring potatoes so many people use on that hideous "green bean & shoestring" cassarole pot luck dish that shows up at every church dinner.

What a great thrill to open that lid and smell the wonderful aroma of those crispy coconut treats.

Can they still be purchased? Does anyone have a recipe for making them?

I guess I've only had the old stuff...it's very chewy crunchy...and so fresh that coconut taste...mmmmmmm...co-co-nuts...doh!

Carrie, next time you come across someone who is opening & selling coconuts ask him to open a young green coconut for you...if he has? Tell him you want some "spoon meat", it's out of this world! It's really thin, and wet, and soft. Not like the older coconut which tends to be dry and hard. They both are good, but mind you they both bring something different to the table.
