Lilikoi and other Local Fruits...
#31
Thanks for the update Carrie. We just had a friend bring over the red/purple variety of fruit. We tasted the fruit side by side. Yellow
versus red. 6 out of six of us choose the red.
A little sweeter. Then we all tasted some Lilikoi butter as they hadn't tasted before.
I will be planting the seeds to the red plant.
Maybe next time we see you we will have a plant for you.

Aloha
Wyatt

And you thought this was a dead thread. Does anyone have a recipe --or an approximation-- of that lilikoi margarita that they have at the Mexican restaurant in Pahoa? Nectar of the GODS. Or maybe I should just come get one.

Hi Glen, lucky for us Hazen posted the recipe in the punatic party thread. I will repost here.

quote
"Good Easy, REAL margaritas:

-Lots of fresh lime juice.
-Cane Sugar (i know, yuck, but no worse than the corn syrup or sugar in sodas)
-Ice full to top of glass, add more as the alcohol melts it.
-Tequilla, Sauza Reposado or Hornitos are good compromise qualities. Sufficient for mixing and fair to the wallet. They become adequate for shots as the margarits set in Wink
-Salt (Kosher or Sea, no table stuff) and or Li Hing Mui powder for the rim.
-Water to dissolve the sugar in.

Squeeze a load a' limes into a pitcher (@cup of juice), add @ cup of sugar, @ 1/2 cup of H2O, @ 3/4 cup of tequila, stir until dissolved. Fill with ice. Important: rub a wedge of lime around rim of glass, dip in salt/powder. Fill with ice, fill, squeeze lime into glass, present, SMILE!

I also like to add a little salt to the actual margarita, it makes it go down like you need it. It's hard to over sugar, or over juice. If you want to jazz stuff up add a dash of Grand Marnier or Cointreau to the glass. Triple sec and Blue Curacao are crap these days, only sugar and a slight orange flavor, don't waste your money. Though electric blue margaritas look good at a tiki party."

I don't know the proportions that Luquin's uses, but I do know that they get their lilikoi extract from the processing plant near Painted Church in Kalapana. Its apparently a frozen extract that costs about $30 for about a gallon size jug.

Wyatt and John,

Thank you! Li Hung Mui powder. Mmmmmmm. Now you've broken my heart -- that little church near Kalapana. Can there possibly be a plant there that makes lilikoi extract? I shall try this drink in your honor. Here it is raining and cold enough to turn the heater on. Why does Southern Californai seems so cold to me now? It never did before.

Anyway, thanks Wyatt/John. I am going to have a party just to celebrate this drink...

I'm not sure of the size of the container. The lady at Luquin's just sort of gestured with her hands as to the size. Call the Big Island Processing (965-0456) for the real scoops.
