Lilikoi Juice

Here is the Lilikoi Butter recipe that I use.

Lilikoi Butter

4 eggs
4 cups sugar
1 pound unsalted butter
1 ¾ cup lilikoi juice

Mix juice, sugar, butter in a large pan. Heat until butter is melted. Beat the eggs together in a separate bowl and temper by drizzling a little of the hot liquid into the beaten eggs so they don’t scramble on you. Keep stirring and when the egg mixture is about the same temperature as the hot liquid, pour it into the pan with the juice, butter and sugar.

Bring to a rolling boil, then down to a slow rolling simmer for about half an hour. This will thicken as it cooks.

Follow regular canning techniques for storage.

It's rich but really good and makes nice Aloha gifts.

This recipe uses fresh papaya, guava, and lilikoi. Use more
lilikoi if you like it tart. You can use
just papaya or guava if that's what you have:

Art & Orchids Tropical Fruit
Cobbler

5 cups of fresh papaya and guava
5 T fresh lilikoi juice
1/3 cup plus 2/3 cup sugar
1 cup plus 3T unbleached flour
1t baking powder
½ t salt
½ t cinnamon
½ t nutmeg
1 large egg, lightly beaten
3T melted butter
Preheat oven to 375 degrees
Combine papaya, guava, and likikoi
juice with 1/3 cup sugar and 3 T flour in an 8-inch square baking
dish.
In medium bowl combine 1 cup flour, 2/3
cup sugar, cinnamon, nutmeg, baking powder, and salt; mix well with
fork. Make a well in the center, add egg, and stir until flour is
moistened. Blend with your fingers.
Sprinkle flour mixture evenly over
fruit. Drizzle melted butter over top. Bake until it is lightly
browned,about 40 minutes.

Transfer to wire rack and cool
slightly. Serve warm or at room temperature.
